Ingredients

4 slices izzio Super Sour Sourdough
8 oz mixed mushrooms (like shiitake, oyster, or cremini)
3 cloves garlic
5 sprigs thyme
3 tbsp butter, softened
1 c gruyere cheese, shredded
Avocado oil, for spraying pan
Salt, to taste

Instructions

  • Step 01
    Place a heavy bottomed skillet over medium low. Spray liberally with avocado oil.
  • Step 02
    Add mushrooms and leave undisturbed for 5-7 minutes until starting to brown. Add 1 tbsp butter, garlic, thyme, and salt to taste. Allow butter to melt then give everything a good stir. Cook another 5-7 minutes until moisture has evaporated from mushrooms and garlic is cooked through.
  • Step 03
    Transfer mushrooms to a small bowl. Strip thyme sprigs of leaves and discard of woody centers.
  • Step 04
    Wipe out pan and return to heat.
  • Step 05
    Spread remaining butter evenly on one side of all slices of bread.
  • Step 06
    Place 2 slices of bread, butter-side down, into skillet. Sprinkle gruyere and half of mushrooms. Cover with lid and cook for 5 minutes or until cheese has melted and buttered side of bread is golden brown. Assemble sandwiches.
  • Step 07
    Repeat with remaining bread, cheese, and mushroom mixture to make an additional sandwich.
