Buffalo Tofu Ranch Slaw

Ingredients

  • 2 slices izzio Power Grains Sourdough
  • 1 16oz block extra firm tofu
  • 1 tbsp cornstarch
  • 2 tbsp buffalo sauce
  • 1 c thinly sliced cabbage
  • 1 stalk celery
  • 1 tbsp ranch dressing, plus more for dipping
  • celery and carrot sticks for serving
  • salt and pepper, to taste

Instructions

  • Step 01
    Preheat oven to 450 degrees.
  • Step 02
    Cut block of tofu into 8 long planks. Pat planks with paper towel to absorb extra moisture. Season with salt and dust cornstarch on all sides of tofu.
  • Step 03
    Arrange on greased parchment lined baking sheet and bake for 40 minutes until crispy.
  • Step 04
    Remove tofu from oven and toss in buffalo sauce.
  • Step 05
    To a medium bowl, add cabbage and celery. Drizzle with ranch and toss to combine.
  • Step 06
    Toast Power Grains Sourdough Sandwich Rolls until golden brown.
  • Step 07
    Assemble sandwiches, starting with tofu then slaw. Serve alongside celery and carrot crudités and extra ranch for dipping.
