Fiber Friendly Avocado Toast

Ingredients

½ c frozen shelled edamame, thawed
½ avocado
1 ½ tbsp flax seeds, divided
2 slices izzio Power Grains Sourdough
Juice of ½ lime
½ tsp salt
Pinch of red pepper flakes
1 tsp olive oil, plus more for topping
2 sprigs cilantro, leaves picked

Instructions

  • Step 01
    Add edamame, avocado, 1 tbsp flax seeds, lime juice, salt, pepper flakes, and olive oil to food processor. Puree on high until smooth, taking care to scrape the sides. If mixture is too thick, add 1 tsp of water at a time until puree comes together.
  • Step 02
    Toast izzio Power Grains Sourdough until golden.
  • Step 03
    Spread avocado edamame mixture on sourdough. Top with remaining flax seeds, cilantro, and drizzle with olive oil.
  • Step 04
    Store any remaining avocado edamame spread in air tight container.
  • Step 05
    Total fiber when using all spread: 16g
