Ingredients

  • 1 Izzio Artisan Bakery Italian Sourdough Sandwich Roll
  • 1 small avocado
  • 1/2 c fire roasted corn
  • 1/2 tsp chili lime seasoning or chili powder, plus more for serving
  • 1 tbsp Mexican crema
  • 1/2 lime, cut into wedges
  • 1 tbsp cotija or queso fresco
  • Cilantro leaves, for serving

Instructions

  • Step 01
    Cut Izzio Artisan Bakery Italian Sourdough Sandwich roll lengthwise. Toast, cut-side up, for 5 minutes until golden brown.
  • Step 02
    While bread is toasting, prep avocado. Cut avocado in half, peel, and slice into thin pieces. Salt liberally and set aside.
  • Step 03
    To a small bowl, add fire roasted corn. Squeeze a lime wedge into the bowl along with 1/2 tsp chili lime seasoning and salt to taste. Mix to combine.
  • Step 04
    Top each half of sandwich roll with avocado, followed by corn mixture, then drizzle with crema. Top with cheese, cilantro, and additional chili lime seasoning. Serve immediately with a lime wedge on the side.
