Every loaf of izzio sourdough starts with just three main ingredients: flour, water and salt. And our final ingredient: time. We don’t rely on baker’s shortcuts like vital wheat gluten or vinegar to create the texture and tang of a true sourdough. At izzio, we make real sourdough – and only real sourdough.

We make bread the way it was crafted thousands of years ago. While many commercial breads rely on preservatives like calcium propionate or vital wheat gluten, we let our bread ferment slowly and naturally, giving every loaf the time it needs to become what it was meant to be: a balance of unmatched flavor and texture, along with our sourdough’s signature open crumb and golden crust.

Slow Fermentation

Every izzio loaf begins with a naturally fermented sourdough starter. Long fermentation breaks down starches and gluten, which lowers the bread’s glycemic index (reducing blood sugar spikes) and may make it easier to digest. In addition, fermentation produces acetic acid, which preserves the bread and extends shelf life – naturally! The result is delicious, more digestible bread that your body recognizes, and your taste buds crave.

  • Ingredients that mimic a real sourdough taste without fermentation
