Dubai Chocolate Bread Pudding

Ingredients

  •  4 c cubed izzio Olive Oil Sea Salt Focaccia
  • 3 oz kataifi 
  • 7 oz pistachio cream
  • 2 tbsp tahini
  • 2 tbsp butter, plus more for greasing
  • 3/4 c (125g) semisweet chocolate chips, divided
  • 1/2 c (100g) granulated sugar
  • 1/4 c (22g) cocoa powder
  • 1 1/2 c (340g) whole milk or half-and-half
  • 3 large eggs
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • chopped pistachios, for serving

Instructions

  • Step 01
    Preheat oven to 325 degrees. Lightly grease 9x9 baking dish with butter.
  • Step 02
    Add butter in a skillet over medium heat. Toast kataifi, stirring frequently, until golden brown, about 10 minutes. Remove from heat and add to a bowl with pistachio cream, tahini, and a dash of salt. Mix to combine.
  • Step 03
    Combine 43g chocolate with sugar, cocoa powder, and 170g milk in a saucepan over medium. Whisk until chocolate melts and mixture thickens. Remove from heat. Once cool, whisk in remaining milk, eggs, and vanilla.
  • Step 04
    While chocolate mixture cools, add bread cubes and remaining chocolate into greased pan. Pour chocolate custard mixture over bread. Let rest for 30 minutes.
  • Step 05
    Dollop half of kataifi mixture of bread pudding. Bake for 25 minutes until edges are set. Allow to cool for 10 minutes then serve with additional dollop of kataifi mixture and chopped pistachios.
