Bacon-Cheddar Dip with Baguette Chips

Ingredients

1 izzio French Baguette
10 cherry tomatoes
2 tsp chipotle hot sauce
10 oz Tender Belly Bacon, diced
1 8 oz block Rumiano Sharp Cheddar Cheese
6 scallions, chopped, white and green sections separate
6 oz cream cheese, cut into cubes
1 1/2 c sour cream
olive oil, for drizzling
salt and pepper, to taste

Instructions

  • Step 01
    Preheat oven to 350 degrees. Slice izzio French Baguette into 1/4 in slices. Generously drizzle with olive oil and sprinkle with salt. Bake for 15-17 mins in oven, until slices are crisp and dry.
  • Step 02
    Quarter tomatoes and add to a small bowl. Season with salt and a few dashes of chipotle hot sauce. Set aside.
  • Step 03
    Grate Rumiano Sharp Cheddar. Set aside.
  • Step 04
    Heat 8in cast iron skillet over medium-high heat. Add Tender Belly Bacon and cook until fat is rendered and pieces are browned, about 8 minutes. Using slotted spoon, transfer to a paper-towel lined plate. Drain all but 1 tbsp grease from skillet.
  • Step 05
    Add scallion whites and salt to skillet. Sauté until soft, about 3 minutes. Add cubed cream cheese and stir until it has melted and scallions are evenly distributed throughout.
  • Step 06
    Reduce heat to low and stir in sour cream, 1 1/2 c cheddar, hot sauce, and all but 3 tbsp bacon. Stir until cheese has melted, about 5 minutes, and salt to taste.
  • Step 07
    Top with remaining cheddar and broil on high until cheese is bubbling and browned.
  • Step 08
    Remove from oven, top with reserved bacon, scallions, marinated tomatoes, black pepper, and extra hot sauce. Serve alongside baguette chips and veggies of your choice.
