Rabanada (Portuguese French Toast)

Ingredients

4 slices izzio Classic White Sandwich Bread (or ½ Organic San Francisco Style Sourdough Batard)
1 egg
½ c whole milk
2 tbsp sweetened condensed milk
2 tsp cinnamon, divided
1 tsp vanilla
Avocado oil
¼ c granulated sugar
A pinch of salt

Instructions

  • Step 01
    Leave 4 slices Classic White Sandwich Bread or ½ San Francisco Style Sourdough Batard, sliced into 1 inch slices, out overnight to dry out.
  • Step 02
    In a medium bowl, add egg, milk, condensed milk, 1 tsp cinnamon, vanilla, and a pinch of salt. Whisk until combined.
  • Step 03
    In a shallow dish, add bread and cover with custard mixture. Allow to sit for 45 minutes to absorb.
  • Step 04
    In a small bowl, combine remaining cinnamon and sugar. Set aside.
  • Step 05
    Heat a nonstick skillet over medium heat. Spray or drizzle with oil. Fry each slice of bread until golden brown on one side, around 4 minutes, then flip and cook for an additional 3 minutes.
  • Step 06
    Remove slices of toast from pan and toss or generously sprinkle with cinnamon sugar.
