Spicy Sausage and White Bean Panzanella

Ingredients

2 oz izzio Rosemary Garlic Focaccia
1 Bilinski’s Organic Spicy Italian with Red Pepper chicken sausage
½ c cannelini beans
2 oz mozzarella pearls
1 tsp calabrian chili paste
10 cherry tomatoes, halved
2 tbsp basil leaves, chopped
1/4 c roasted red peppers
2 tbsp olive oil, plus more for serving
½ tbsp red wine vinegar
Salt, to taste

Instructions

  • Step 01
    Preheat oven to 350 degrees. Cut izzio Rosemary Garlic Focaccia into ½ inch squares. Drizzle with 1 tbsp olive oil, toss to evenly coat bread cubes, and bake for 15 minutes or until dry to the touch. 
  • Step 02
    Place small skillet over medium heat with a drizzle of oil. Slice chicken sausage into medallions. Cook sausage in skillet until browned, about 10 minutes. 
  • Step 03
    In a large bowl, combine bread, sausage, beans, mozzarella, calabrian chili paste, tomatoes, basil, and roasted red peppers. Drizzle with remaining oil and red wine vinegar. Toss to combine and add salt to taste.
