Whipped Ricotta & English Pea Rosemary Lemon Focaccia Toast

Ingredients

½ izzio Focaccia
1 c whole fat ricotta
1 c shelled fresh English peas
2 tbsp fresh herbs of choice, like mint or basil
½ tsp salt, plus more for serving
Black pepper, for serving
Olive oil, for serving

Instructions

  • Step 01
    Bring small pot of water to a boil and prepare a medium bowl with ice and water. Add peas to pot and cook for 2 minutes, until bright green and tender. Drain peas and add to ice bath for 2 minutes. Drain and pat dry with a paper towel.
  • Step 02
    In a food processor or with an immersion blender, whip ricotta until smooth. Season with ½ tsp salt.
  • Step 03
    Slice focaccia and toast until golden brown.
  • Step 04
    Spread ricotta over focaccia and top with peas, herbs, olive oil, salt and pepper.
